Dried beans, rice, canned tuna/flakes of chicken/flakes of ham/flakes or turkey. Also, if there are foodbanks in your area make use of them. It's what I do.

Ramen noodles. Every serious hiki must've at some point survived purely on ramen for an extended period of time, I know I have.
